- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 red bell pepper, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups spinach, wilted
- 1 jar marinara sauce
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- Preheat the oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
- Add zucchini, yellow squash, and red bell pepper to the skillet. Cook until tender.
- In a bowl, combine ricotta cheese, spinach, and Italian seasoning.
- Spread a layer of marinara sauce in a baking dish, followed by layers of noodles, ricotta mixture, sautéed vegetables, and mozzarella cheese.
- Repeat layers until all ingredients are used, finishing with mozzarella and Parmesan on top.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
