2 cups roasted peanuts
1 cup granulated sugar
1/2 cup light corn syrup
1/4 cup unsalted butter
1 teaspoon vanilla extract
1-2 jalapeños, finely chopped
1/4 teaspoon baking soda
1/4 teaspoon salt
Instructions
In a large saucepan, combine sugar, corn syrup, butter, and jalapeños over medium heat, stirring until the sugar dissolves.
Bring the mixture to a boil without stirring, cooking until it reaches a deep amber color.
Remove from heat and carefully stir in vanilla, baking soda, and salt.
Fold in the roasted peanuts until well coated.
Pour the mixture onto a greased baking sheet, spreading evenly.
Let it cool completely before breaking into pieces.
Notes
For a spicier treat, use more jalapeños or leave some seeds in.
