  • 1 tablespoon olive oil
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups vegetable or chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups cooked chicken, shredded
  • 1 cup pasta (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions and garlic, and sauté until onions are translucent.
  3. Stir in the carrots and celery, cooking for another 5 minutes.
  4. Add the broth, diced tomatoes, thyme, and oregano. Bring to a boil.
  5. Reduce heat and let simmer for 20 minutes.
  6. Add the shredded chicken and pasta, if using, and cook until the pasta is tender.
  7. Season with salt and pepper, and serve hot garnished with fresh parsley.
