Ingredients

  • 1 pound ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 6 cups beef broth
  • 1 cup orzo
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 cups spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix ground beef, bread crumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
  2. Form into small meatballs.
  3. In a large pot, heat beef broth over medium heat.
  4. Add meatballs, carrots, and onion. Cook until meatballs are browned.
  5. Stir in orzo and cook until tender.
  6. Add spinach and cook for an additional 2 minutes.
  7. Season with salt and pepper to taste before serving.

Notes

  • This soup can be made ahead of time and reheated.
  • For a richer flavor, use homemade beef broth.
