- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 6 cups beef broth
- 1 cup orzo
- 2 carrots, diced
- 1 onion, chopped
- 2 cups spinach, chopped
- Salt and pepper to taste
- In a bowl, mix ground beef, bread crumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
- Form into small meatballs.
- In a large pot, heat beef broth over medium heat.
- Add meatballs, carrots, and onion. Cook until meatballs are browned.
- Stir in orzo and cook until tender.
- Add spinach and cook for an additional 2 minutes.
- Season with salt and pepper to taste before serving.
