Ingredients

  • 1 pound ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups beef broth
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, mix together the ground beef, bread crumbs, Parmesan cheese, egg, garlic, oregano, salt, and pepper.
  2. Form the mixture into small meatballs, about 1 inch in diameter.
  3. In a large pot, heat olive oil over medium heat and add the meatballs. Cook until browned.
  4. Add beef broth to the pot and bring to a simmer.
  5. Stir in the orzo and cook according to package instructions.
  6. In the last few minutes, add the spinach and cook until wilted.
  7. Serve hot and enjoy!

Notes

  • For added flavor, sprinkle some extra Parmesan cheese on top before serving.
