- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cups mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 4 cups vegetable broth
- 1 cup milk
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add chopped onions and cook until translucent.
- Add sliced mushrooms and cook until they release moisture.
- Stir in minced garlic and paprika, cooking for another minute.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Blend the soup until smooth, then return it to the pot.
- Add milk, soy sauce, and lemon juice. Warm through.
- Season with salt and pepper, then stir in fresh parsley before serving.
