A delicious and comforting Hungarian Mushroom Soup that warms the soul.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and cook until translucent.
  2. Add sliced mushrooms and cook until they release moisture.
  3. Stir in minced garlic and paprika, cooking for another minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Blend the soup until smooth, then return it to the pot.
  7. Add milk, soy sauce, and lemon juice. Warm through.
  8. Season with salt and pepper, then stir in fresh parsley before serving.

Notes

  • For creamier soup, add more milk.
  • Top with additional parsley for garnish.
