These Healthy Raspberry Cheesecake Bars are a delicious guilt-free treat that combines the tartness of raspberries with a creamy cheesecake filling, perfect for satisfying your sweet tooth.

Ingredients

  • 1 cup almond flour
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 cup cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 1 cup fresh raspberries
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a bowl, combine almond flour, melted coconut oil, and maple syrup to form the crust. Press into the bottom of the prepared dish.
  3. In another bowl, mix cream cheese, Greek yogurt, honey, vanilla extract, and cornstarch until smooth. Pour over the crust.
  4. Dot the top with raspberries.
  5. Bake for 25-30 minutes until set. Let cool before slicing.
