Ingredients

  • 3 ripe bananas
  • 1/4 cup honey or maple syrup
  • 1/4 cup Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Stir in honey (or maple syrup), Greek yogurt, eggs, and vanilla extract until well combined.
  4. In another bowl, mix the whole wheat flour, baking soda, salt, and cinnamon.
  5. Gradually combine the dry ingredients with the wet ingredients, stirring until just combined.
  6. Fold in walnuts or chocolate chips if desired.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For added moisture, use very ripe bananas.
  • Store leftovers in an airtight container.
