- 1/4 cup honey or maple syrup
- 1/4 cup Greek yogurt
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup walnuts or chocolate chips (optional)
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the ripe bananas until smooth.
- Stir in honey (or maple syrup), Greek yogurt, eggs, and vanilla extract until well combined.
- In another bowl, mix the whole wheat flour, baking soda, salt, and cinnamon.
- Gradually combine the dry ingredients with the wet ingredients, stirring until just combined.
- Fold in walnuts or chocolate chips if desired.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
