  • 4 boneless, skinless chicken breasts
  • 1 cup Gouda cheese, shredded
  • 1 cup mushrooms, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  3. Add mushrooms, thyme, paprika, salt, and pepper. Cook until mushrooms are browned.
  4. Remove from heat and stir in shredded Gouda.
  5. Carefully butterfly the chicken breasts and stuff each with the mushroom and cheese mixture.
  6. Place stuffed chicken in a baking dish and bake for 25-30 minutes until cooked through.
  7. Let rest for 5 minutes before serving.
