- 1 pound boneless chicken thighs
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons tikka masala spice mix
- 1 can diced tomatoes
- 1 cup heavy cream
- 2 tablespoons fresh coriander, chopped
- Heat the oil in a large pan over medium heat. Add the chopped onion and sauté until golden brown.
- Add the garlic and ginger; cook for another minute.
- Stir in the tikka masala spice mix and cook for 30 seconds to release the aromas.
- Add the chicken thighs and cook until browned.
- Pour in the diced tomatoes and simmer for 15 minutes.
- Stir in the heavy cream and cook for an additional 5 minutes.
- Garnish with fresh coriander before serving.
