Gardener’s Pie with Root Vegetable Mash

A delicious and comforting dish combining layers of savory vegetables topped with creamy root vegetable mash.

Ingredients

  • 2 cups diced root vegetables (carrots, parsnips, potatoes)
  • 1 cup cooked lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup milk or plant-based alternative

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until soft.
  3. Add the diced root vegetables and cook for 5 minutes.
  4. Stir in the cooked lentils, vegetable broth, thyme, rosemary, salt, and pepper. Cook for another 10-15 minutes until vegetables are tender.
  5. Meanwhile, boil root vegetables in salted water until soft. Drain and mash with milk.
  6. In a baking dish, layer the vegetable mixture and top with the root vegetable mash.
  7. Bake for 25-30 minutes or until the top is golden.

Notes

  • For extra flavor, add nutritional yeast or cheese on top of the mash.
  • Serve with a side salad for a complete meal.
