- 2 cups diced root vegetables (carrots, parsnips, potatoes)
- 1 cup cooked lentils
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup milk or plant-based alternative
- Preheat oven to 375°F (190°C).
- In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until soft.
- Add the diced root vegetables and cook for 5 minutes.
- Stir in the cooked lentils, vegetable broth, thyme, rosemary, salt, and pepper. Cook for another 10-15 minutes until vegetables are tender.
- Meanwhile, boil root vegetables in salted water until soft. Drain and mash with milk.
- In a baking dish, layer the vegetable mixture and top with the root vegetable mash.
- Bake for 25-30 minutes or until the top is golden.
Notes
- For extra flavor, add nutritional yeast or cheese on top of the mash.
- Serve with a side salad for a complete meal.
