A comforting and delicious soup featuring tender short ribs and gooey Gruyère cheese on toasted bread.

Ingredients

  • 2 pounds short ribs
  • 4 cups beef broth
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 loaf crusty bread
  • 2 cups Gruyère cheese, shredded

Instructions

  1. Preheat your oven to 350°F.
  2. In a large pot, heat olive oil over medium heat. Add onions and cook until caramelized.
  3. Add garlic and cook for another minute.
  4. Pour in the red wine and let it simmer until reduced.
  5. Add short ribs, beef broth, thyme, and bay leaf. Bring to a boil.
  6. Cover and transfer to the oven. Bake for 2.5 hours.
  7. Remove from oven and shred the short ribs.
  8. Toast the bread and top with Gruyère cheese. Broil until melted.
  9. Serve soup with cheese toast on top.

Notes

  • For added flavor, you can use homemade broth.
  • Let the soup rest for a while for flavors to meld.
