- 2 pounds short ribs
- 4 cups beef broth
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 1 cup red wine
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 bay leaf
- 1 loaf crusty bread
- 2 cups Gruyère cheese, shredded
- Preheat your oven to 350°F.
- In a large pot, heat olive oil over medium heat. Add onions and cook until caramelized.
- Add garlic and cook for another minute.
- Pour in the red wine and let it simmer until reduced.
- Add short ribs, beef broth, thyme, and bay leaf. Bring to a boil.
- Cover and transfer to the oven. Bake for 2.5 hours.
- Remove from oven and shred the short ribs.
- Toast the bread and top with Gruyère cheese. Broil until melted.
- Serve soup with cheese toast on top.
