A rich and hearty soup that combines the flavors of French onion soup with tender beef short ribs.

  • 2 pounds beef short ribs
  • 4 cups beef broth
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup Gruyère cheese, grated
  • 1/2 cup French baguette, sliced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 20 minutes.
  2. Add minced garlic and thyme, cooking for an additional 2 minutes.
  3. Stir in beef short ribs, season with salt and pepper, and pour in beef broth.
  4. Bring to a simmer and cover the pot, cooking for about 2 hours until the beef is tender.
  5. Once cooked, remove short ribs, shred the meat, and return to the pot.
  6. Preheat broiler. Ladle the soup into oven-safe bowls, top with baguette slices and Gruyère cheese.
  7. Broil for 3-5 minutes or until the cheese is bubbly and golden.
