Ingredients
Scale
2 cups heavy cream
1 cup whole milk
1/2 cup granulated sugar
2 tablespoons Earl Grey tea leaves
2 teaspoons gelatin powder
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
In a saucepan, combine heavy cream, whole milk, and sugar over medium heat until sugar dissolves and mixture is hot, but not boiling.
Add Earl Grey tea leaves and allow to steep for about 10 minutes.
Strain the mixture to remove tea leaves and return it to the saucepan.
Dissolve the gelatin powder in a small bowl of cold water, then add it to the warm cream mixture and stir until completely dissolved.
Stir in vanilla extract and salt.
Pour the mixture into individual serving dishes and refrigerate for at least 4 hours or until set.
Serve chilled with a garnish of fresh berries if desired.
Notes
For a stronger tea flavor, let the tea leaves steep longer or use more tea.
This dessert pairs well with citrus fruits or a drizzle of honey.
