  • 1 cup lentils
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 cup corn
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Rinse lentils under cold water and set aside.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion, garlic, and bell pepper, and sauté until softened.
  4. Stir in cumin and chili powder, and cook for another minute.
  5. Add lentils, diced tomatoes, and vegetable broth. Bring to a boil.
  6. Reduce heat and simmer for 25-30 minutes, until lentils are tender.
  7. Add corn, salt, and pepper. Cook for an additional 5 minutes.
