  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1/2 cup vegetable oil for frying

Instructions

  1. Cut the eggplants into 1-inch cubes and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  2. In a bowl, mix soy sauce, garlic, brown sugar, and rice vinegar.
  3. Rinse and dry the eggplant, then coat with cornstarch.
  4. Heat the oil in a pan over medium heat and fry the eggplant until golden and crispy.
  5. Drain on paper towels and toss with the garlic soy glaze.

Notes

  • For extra flavor, add red pepper flakes to the glaze for some heat.
  • Keep an eye on the eggplant while frying to avoid burning.
