Delicious and moist cinnamon swirl banana bread perfect for breakfast or a snack.

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons cinnamon sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda and salt.
  5. Add sugar, egg, and vanilla extract and mix well.
  6. Stir in the flour until just incorporated.
  7. Pour half of the batter into the prepared pan and sprinkle with half of the cinnamon sugar.
  8. Add the remaining batter, then sprinkle the top with the remaining cinnamon sugar.
  9. Bake for 60-65 minutes or until a toothpick comes out clean.
  10. Let it cool in the pan for a few minutes, then transfer to a wire rack.

Notes

  • Make sure to use very ripe bananas for the best flavor.
  • Store leftovers wrapped in plastic wrap to keep them moist.
