  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons cinnamon
  • 3 tablespoons brown sugar

Instructions

  1. In a bowl, mix flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, egg, melted butter, and vanilla.
  3. Combine wet and dry ingredients until just mixed.
  4. In a separate bowl, mix cinnamon and brown sugar to create a swirl topping.
  5. Heat a non-stick skillet over medium heat and pour in pancake batter.
  6. Before flipping, add a swirl of cinnamon mixture on top of each pancake.
  7. Cook until bubbles form, then flip and cook until golden brown.
  8. Serve with maple syrup and extra cinnamon sugar if desired.
