  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1/2 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar, packed
  • 1 teaspoon ground cinnamon (for filling)
  • 1/2 cup cream cheese, softened (for frosting)
  • 1 cup powdered sugar (for frosting)
  • 1-2 tablespoons milk (for frosting)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine flour, sugar, baking powder, salt, and ground cinnamon.
  3. In another bowl, whisk together melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a small bowl, mix brown sugar and ground cinnamon for the filling.
  6. Fill each muffin cup halfway with batter, sprinkle with the cinnamon sugar mixture, then top with remaining batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. While muffins cool, make the frosting by mixing cream cheese, powdered sugar, and enough milk to achieve desired consistency.
  9. Spread frosting over the cooled muffins and enjoy!

Notes

  • For an extra touch, add chopped nuts or raisins to the batter.
