  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brewed coffee, cooled
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon instant coffee granules

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix flour, sugar, cocoa powder, baking soda, and salt.
  3. Add softened butter, eggs, vanilla extract, and cooled coffee to the dry ingredients. Mix until smooth.
  4. Fill cupcake liners 2/3 full with batter and bake for 18-20 minutes.
  5. Let the cupcakes cool completely.
  6. Whip heavy cream with powdered sugar and instant coffee until soft peaks form.
  7. Fill a piping bag with the cream and frost the cooled cupcakes.
