  • 4 chicken thighs
  • 2 tablespoons chipotle honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups potatoes, peeled and chopped
  • ½ cup smoked gouda, shredded
  • ¼ cup heavy cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together chipotle honey, garlic powder, onion powder, salt, and pepper.
  3. Coat chicken thighs with the spice mixture and place them in a baking dish.
  4. Bake for 25-30 minutes or until the chicken is cooked through.
  5. Meanwhile, boil the potatoes in a pot of salted water until tender, about 15 minutes.
  6. Drain the potatoes and mash them with smoked gouda and heavy cream until creamy.
  7. Serve the chicken thighs on a bed of smoked gouda mashed potatoes.

Notes

  • Adjust the spice level by varying the amount of chipotle honey used.
  • Can use chicken breasts instead of thighs if preferred.
