1 cup rolled oats
1 cup unsweetened almond milk
1 medium carrot, grated
1/4 cup Greek yogurt
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup raisins or walnuts (optional)
Instructions
In a mixing bowl, combine the rolled oats, almond milk, grated carrot, Greek yogurt, honey or maple syrup, vanilla extract, ground cinnamon, and ground nutmeg.
Mix well until all ingredients are combined.
If desired, fold in raisins or walnuts.
Transfer the mixture to a jar or airtight container and refrigerate overnight.
In the morning, stir the oats and enjoy cold or warm.
