Delicious and nutritious blueberry oat Greek yogurt muffins that make for a perfect breakfast or snack.

  • 1 cup rolled oats
  • 1 cup Greek yogurt
  • 1 cup fresh blueberries
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix rolled oats, Greek yogurt, honey, eggs, and vanilla extract.
  3. In another bowl, combine baking powder, baking soda, and salt.
  4. Add dry ingredients to wet ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into a muffin tin lined with liners.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • For a sweeter muffin, you can add chocolate chips.
  • Feel free to substitute other berries if desired.
