Decadent and creamy, this Biscoff Salted Caramel Cheesecake is the perfect dessert for any occasion.

Ingredients

  • 200 grams Biscoff cookies
  • 100 grams unsalted butter, melted
  • 400 grams cream cheese
  • 200 ml heavy cream
  • 200 grams sugar
  • 3 large eggs
  • 100 ml salted caramel sauce
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, crush the Biscoff cookies and mix with melted butter, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth, then add sugar and mix well.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in heavy cream, salted caramel sauce, and vanilla extract until fully combined.
  6. Pour the cheesecake mixture over the cookie crust and smooth the top.
  7. Bake for 50-60 minutes or until set. The center should still have a slight jiggle.
  8. Remove from oven and let it cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a stronger caramel flavor, drizzle more salted caramel sauce on top before serving.
