- 200 grams Biscoff cookies
- 100 grams unsalted butter, melted
- 400 grams cream cheese
- 200 ml heavy cream
- 200 grams sugar
- 3 large eggs
- 100 ml salted caramel sauce
- 1 teaspoon vanilla extract
- Preheat the oven to 180°C (350°F).
- In a bowl, crush the Biscoff cookies and mix with melted butter, then press into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese until smooth, then add sugar and mix well.
- Add the eggs one at a time, mixing well after each addition.
- Stir in heavy cream, salted caramel sauce, and vanilla extract until fully combined.
- Pour the cheesecake mixture over the cookie crust and smooth the top.
- Bake for 50-60 minutes or until set. The center should still have a slight jiggle.
- Remove from oven and let it cool, then refrigerate for at least 4 hours before serving.
