  • 3 large eggs
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of muffin tins lined with paper liners.
  3. In a separate bowl, beat cream cheese until smooth. Gradually add sugar and vanilla extract, mixing until well combined.
  4. Add eggs one at a time, mixing on low speed after each addition.
  5. Mix in sour cream and lemon juice until smooth.
  6. Pour the cheesecake batter over the crusts in the muffin tins.
  7. Bake for 20 to 25 minutes or until set. Let cool before refrigerating.
  8. Chill in the refrigerator for at least 4 hours before serving.
