A delightful bread combining the tartness of cranberries with the sweetness of orange.

  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon grated orange zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the sugar and orange juice until dissolved.
  3. Add in the oil and eggs, then mix well.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the cranberries and orange zest.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let cool before slicing and serving.
