- 2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 3 cups peeled and sliced apples
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Pour the cream cheese mixture over the crust in the springform pan.
- In another bowl, toss apples with lemon juice, cinnamon, and brown sugar. Spread over the cheesecake layer.
