  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups peeled and sliced apples
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. In another bowl, toss apples with lemon juice, cinnamon, and brown sugar. Spread over the cheesecake layer.
  6. Bake for 50-60 minutes or until the center is set. Let cool before serving.
