- 2 ripe bananas
- 1 cup almond flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup fresh blueberries
- 2 large eggs
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Add the eggs and vanilla extract to the bananas and mix until well combined.
- In a separate bowl, combine almond flour, baking soda, baking powder, and salt.
- Gradually stir the dry ingredients into the wet ingredients until just combined.
- Gently fold in the blueberries.
- Fill each muffin tin about 3/4 full with the batter.
- Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack to cool completely.
Notes
- For added sweetness, you can mash in a couple of dates or add a few drops of maple syrup.
- Feel free to substitute the blueberries with other berries or chocolate chips.
